Cognac is one of the eaux-de-vie of wines with a controlled designation of origin ("Cognac region", region of France) and resulting from a strict traditional distillation method which is double heating in a Charentais alembic. The distillers make this eau-de-vie from wine which comes mainly from the Ugni-Blanc grape must but it is possible to find Colombard and Folle Blanche grapes. However this is not to be confused with Armagnac which has been distilled in stills. This is why we find aromas with more finesse in cognacs. Among all the terroirs, it is a spirit specific to its vineyard with a strong aromatic diversity. Some cognacs (the older ones) even have their own carafe and are entirely intended for tasting.

What is a VSOP Cognac? Quite simply, it is a very superior Old Pale cognac that aged at least 4 years in oak casks in the cellars. It’s the second youngest appellation that can exist. (Before the Napoleon Cognac, XO Cognac and all that is vintage)

VSOP cognac can be drunk dry or as a cocktail. The aromas of a VSOP are less fruity than VS because the Very Superior Old Pale fermented during more years in cellars which makes its appearance and its aromas more woody.
